Pagos del Moncayo is a sustainable traditional winery in the Sierra del Moncayo producing Prados wines from hand-picked grapes, treading the grapes using the traditional method. It is a European benchmark for the production of sustainable wines under the ECO-PROWINE project from the EU.
Pagos del Moncayo produces traditional wines by applying innovative technologies to the time-honoured winemaking system. Our philosophy is to make wines with the utmost respect for the environment that clearly reflect their origin. This, thus, means obtaining the highest quality and honesty in our wines.
Time-honoured methods are used at Pagos del Moncayo both in looking after the vineyard and in the winemaking process in the winery.
Four wines with very different personalities and all under the same name: PRADOS. Prados Fusión, Prados Colección Garnacha, Prados Colección Syrah and Prados Privé are the four red wines produced by Pagos del Moncayo. This winery in the Campo de Borja DO produces wines in a traditional way, certified by ECO-PROWINE as sustainable wines, recognising the winery's emission levels are well below the European average.

Vinos del Viento are wines made from local varieties with minimal intervention that is respectful towards the environment. As this winery lies within the Campo de Borja D.O. - "The Empire of Grenache" - the main varieties are Grenache, White Grenache and Cariñena. The top-end wines are from unique vineyards with vines that are over 50 years old. The jewel in the crown is the Clos de Ros vineyard up in the Iberian mountain range, a rain-fed Red Grenache vineyard dating back over 80 years. In the area of Las Hoyas. This vineyard is cared for using sustainable bio-dynamic wine growing. No pesticides, herbicides or fungicides are used. Each strain produces very few kilos of grapes, around 1 kg per strain or less. The resulting wine is highly expressive and concentrated.
The winery is called Vinos del Viento because in the Ebro Valley in Aragon the Cierzo wind blows strong and often. Michael Cooper is the winemaker and creator of the wines. He is originally from California and when he came to Spain, he fell in love with wines and in particular Grenache wines. Michael Cooper is not looking for the highest yield of tons of grapes per hectare, rather he seeks quality. The old vines are the heritage of Aragon and every year they are being uprooted. At Vinos del Viento we look for winegrowers who can sell us grapes from old vines and we pay them a high and fair price to preserve this culture, this winegrowing history.

Bodegas Borsao runs over 2200 ha of vineyard in the DO Campo de Borja, with the native grenache variety accounting for some 60% of this land. These wines are recognised for their personality around the world thanks to the age of the vineyard, composition of the soil and reduced yields.

Grenache: a treasure trove
Grenache is the variety typically found in the Campo de Borja PDO. This grape is much loved for its complexity and aromas the world over. There are old vineyards (30 to 50 years old) with low yields, the quality of which is recognized all over the world.
A brief history
Created in 1945 as Cooperativa Unión Agraria del Campo Santo, the winery belongs to the Campo de Borja Denomination of Origin - the grenache territory par excellence. At the foot of the Moncayo in the heart of Aragon one can find the ideal conditions to cultivate grenache and produce quality wines.

At 2,314 metres high, the Moncayo dominates the landscape of Aragon. It is the primary geographical landmark in the region and one that gives a special character to our wines.
