In 2002, built upon Campo de Borja's oldest vineyards, this project was established with the ambition of becoming the world benchmark for Garnacha wines produced from indigenous local clones. Today, the winery owns around 160 hectares of its own vineyards.
El Moncayo shapes an extreme continental climate, influenced by Atlantic weather in winter and Mediterranean conditions in summer. The local Cierzo wind accentuates temperature shifts, slows down ripening, and naturally prevents pests and diseases. Soils range from red clay with sandstone in Tabuenca to gravels and rounded pebbles in Borja.
The 30 to 100-year-old vines are situated at altitudes of around 550 metres in the Borja area, reaching up to 850 metres in Tabuenca. Cultivated as traditional bush vines, they yield very low quantities. Our wines embody the true essence of Campo de Borja Garnacha.
The indigenous Garnacha vines of Alto Moncayo, combined with the unique microclimate, soil types, exposure, and meticulous vineyard management, create an authentic and distinct terroir. Together, these factors yield wines with a remarkably strong personality that is truly unique in the world.

Pagos del Moncayo is a sustainable traditional winery in the Sierra del Moncayo producing Prados wines from hand-picked grapes, treading the grapes using the traditional method. It is a European benchmark for the production of sustainable wines under the ECO-PROWINE project from the EU.
Pagos del Moncayo produces traditional wines by applying innovative technologies to the time-honoured winemaking system. Our philosophy is to make wines with the utmost respect for the environment that clearly reflect their origin. This, thus, means obtaining the highest quality and honesty in our wines.
Time-honoured methods are used at Pagos del Moncayo both in looking after the vineyard and in the winemaking process in the winery.
Four wines with very different personalities and all under the same name: PRADOS. Vinos del Viento son vinos elaborados con las variedades autóctonas de una manera de intervención mínima y respetuosa. Siendo que la bodega se sitúa en D.O. Campo de Borja, ‘El Imperio de La Garnacha’, las variedades principales son Garnacha, Garnacha Blanca y Cariñena. Los vinos de más alta gama son de viñedos únicos de viñas viejas de más de 50 años de edad. La joya de la corona es el viñedo Clos de Ros, un viñedo en secano de Garnacha Tinta de más de 80 años situado en las montañas del Sistema Ibérico, en la zona de Las Hoyas. Este viñedo se cuida con una viticultura biodinámica y sostenible. No se emplean ni pesticidas ni herbicidas ni fungicidas. Cada cepa produce muy pocos kilos de uva, entorno a 1kg por cepa o menos. El vino resultante es de alta expresión y concentración. La bodega se llama Vinos del Viento porque en la zona de Aragón, del Valle del Ebro, el viento del Cierzo sopla fuerte y con frecuencia. Michael Cooper es el enólogo y creador de los vinos. Es originariamente de California y cuando vino a España, se enamoró de los vinos y en particular de los de la variedad Garnacha. Michael Cooper no busca el mayor rendimiento de toneladas de uva por hectárea, sino, va en búsqueda de la calidad. Vinos del Viento are wines made from local varieties with minimal intervention that is respectful towards the environment. As this winery lies within the Campo de Borja D.O. - "The Empire of Grenache" - the main varieties are Grenache, White Grenache and Cariñena. The top-end wines are from unique vineyards with vines that are over 50 years old. The jewel in the crown is the Clos de Ros vineyard up in the Iberian mountain range, a rain-fed Red Grenache vineyard dating back over 80 years. In the area of Las Hoyas. This vineyard is cared for using sustainable bio-dynamic wine growing. No pesticides, herbicides or fungicides are used. Each strain produces very few kilos of grapes, around 1 kg per strain or less. The resulting wine is highly expressive and concentrated.
The winery is called Vinos del Viento because in the Ebro Valley in Aragon the Cierzo wind blows strong and often. Michael Cooper is the winemaker and creator of the wines. He is originally from California and when he came to Spain, he fell in love with wines and in particular Grenache wines. Michael Cooper is not looking for the highest yield of tons of grapes per hectare, rather he seeks quality. The old vines are the heritage of Aragon and every year they are being uprooted. At Vinos del Viento we look for winegrowers who can sell us grapes from old vines and we pay them a high and fair price to preserve this culture, this winegrowing history.

Grenache: a treasure trove
Grenache is the variety typically found in the Campo de Borja PDO. This grape is much loved for its complexity and aromas the world over. There are old vineyards (30 to 50 years old) with low yields, the quality of which is recognized all over the world.
A brief history
Created in 1945 as Cooperativa Unión Agraria del Campo Santo, the winery belongs to the Campo de Borja Denomination of Origin - the grenache territory par excellence. At the foot of the Moncayo in the heart of Aragon one can find the ideal conditions to cultivate grenache and produce quality wines.

At 2,314 metres high, the Moncayo dominates the landscape of Aragon. It is the primary geographical landmark in the region and one that gives a special character to our wines.
