DESCRIPTION
Ontos is a 100% Garnacha wine crafted from a careful selection of unique plots of old vines located around Cervera de la Cañada, within the D.O.P. Calatayud.
Harvesting is carried out by hand in crates, followed by cluster selection at the winery. Fermentation and maceration take place in temperature-controlled stainless steel vats, with manual pumping-over (remontages) and punch-downs (bazuqueos) to achieve a balanced extraction and preserve the character of the fruit.
Afterwards, the wine is aged in new French oak barrels, imparting complexity, structure and elegance.
TASTING NOTES
Deep purple in colour and opaque in appearance, it displays a powerful and complex nose dominated by ripe black fruits, accompanied by spicy notes and elegant nuances from oak ageing.
On the palate, it is structured, balanced and persistent, with ripe tannins, good concentration and a long, complex finish.
Food pairing: ideal with red meats, roast lamb, grilled meats, casseroles, game dishes and mature cheeses.
