Cabernet Sauvignon
DESCRIPTION
Around the world Cabernet Sauvignon is considered one of the finest grapes for the production of great reds that will keep well, as well as the queen of the so-called “improving” varieties. This variety has played an important role historically in the north of Aragon given the area’s proximity to France, particularly given the vines imported in the post-phylloxera period. It is now considered part of the identity of the classic Aragonese Somontano reds. This grape is very productive and its yields must be controlled to ensure wines of the right concentration and aromatic balance. The aromatic palette of the variety ranges from ripe black fruit (especially notes of cassis and plums) to vegetable and peppery notes. When ageing has occurred, the wine is often imbued with tobacco and spicy aromas. .
